What is Kirkland Chicken Tortilla Soup?

For those of you hesitant to cook at home, let me tell you about the Kirkland brand soups offered by Costco. A favorite among many is their Kirkland chicken tortilla soup, which I love to make as a quick meal. The key ingredients are fajita seasoning and tomato sauce–a perfect combination!

You can expect this soup to be ready in just minutes, and this recipe only takes a few simple but delicious steps.

Ingredients

  • 1 Jar (32-Ounce) Kirkland Signature Tomato Sauce
  • 1 Jar (10.75-Ounce) Kirkland Signature Roasted Red Pepper Tomato and Garlic Pasta Sauce
  • 1 Package (10.75 Ounce) Kirkland Fajita Seasoning
  • 1 Bag (11.6 Ounce), Kirkland Frozen Tortilla Chips, Fully Cooked
  • 1 Can (13.5 Ounce) Kirkland Red Kidney Beans, Drained and Rinsed
  • 1 Bag (18 Ounce) Kirkland Ready-To-Eat Mexican Rice

Method:

Step 1.

Preheat oven to 400 degrees F. Place tortilla chips in a single layer on a cookie sheet; bake for 18 minutes or until crisp and light golden brown. Let the chips cool completely.

Step 2.

In a medium saucepan, bring chicken broth, tomato sauce, and pasta sauce to a simmer; keep warm over low heat.

Step 3.

Mix fajita seasoning and chicken soup; stir to blend. Add beans, tortilla chips, and rice; stir well to combine. Cover and chill for at least 1 hour.

Step 4.

In a small bowl, mash softened tortilla chips until they are very moist but crunchy (do not make them mushy).

Step 5.

Add mashed tortilla chips to the soup as you are serving.

Step 6.

Serve immediately with a garnish of chopped green onions and sour cream if desired.

Mash softened tortillas to make the soup more creamy and have more texture. You may have to cook the softened tortillas in some chicken broth before adding them to the soup, so they soften up before blending.

The best way to enjoy your soup

  1. Add 2 cups of Kirkland Chicken Tortilla Soup to a large soup bowl.

  3. Lay out your toppings buffet-style: shredded cheese, cooked black beans, corn kernels, chopped green onions, sour cream, and chips or tortillas

The Kirkland Chicken Tortilla Soup has a creamy flavor from puffed tortillas. You are missing out if you have never tried Kirkland’s puffed tortillas. They are crunchy and flavorful and take the soup to another level of deliciousness.

I would recommend adding extra toppings, such as chopped green onions or sour cream, to add a different flavor.

Is the chicken tortilla soup back?

Last year Kirkland reduced all of their tortilla soups by half. They only have the Chicken Tortilla Soup now. I checked the shelves, and none of the other soups were there.

In 2–3 years, all the hashes will be gone, and the items will be found in different sections, like the soup is now or sold out, like canned tomatoes and pasta sauce are.

Why is chicken soup good for viruses?

Chicken soup is good for viruses because the high amounts of sodium and potassium and some extra vitamins can combat viruses. Your body naturally produces these, so the different nutrients you get from using chicken soup are very healthy.
